Bagels have been sounding so good to me lately. So, I searched to see if I could make some from scratch! I came across this recipe, and tried it out.

I made a few substitutions. I used White Whole Wheat flour from Bob’s Red Mill and I used a squirt of honey instead of sugar. I did not do the egg wash, I sprayed them with a little cooking spray. Which, I also used instead of parchment paper. I guess I did a lot of things differently, but they turned out great! Check them out:

The whole wheat white flour gave them a rich flavor. We sliced and toasted ours and add some butter. They were scrumptious!

Ok, I know that this is terrible for you, but it is the only thing that I want to eat! The whole time I am making it I say “eww, I can’t believe that I want to eat this!” I don’t like pig products, I don’t like fatty things like gravy, this is so not me! But, the belly is speaking and sausage gravy it is!

Ingredients:

ground sausage

flour

milk

biscuits (I used store bought because I was too hungry to make homemade)

Get your biscuits cooking while you make the gravy. Brown the amount of sausage you want, I did about a third of the package. Then remove the sausage from the pan, leaving the grease behind (so gross I know, but that is what makes it taste so good). There should be about 2 to 3 tablespoons of grease in the pan, if there is more than that discard some. Add an equal amount of flour, 2 to 3 tablespoons, stirring continuously. Keep theĀ  burner on medium to medium high, slowly pour over the milk, about a cup. Keep stirring while the gravy cooks and becomes thick, it may take a little while, just keep stirring. Once your gravy becomes thick add the sausage back and voila you have sausage gravy!

Here is my totally delicious recipe for Granola. If you are looking for exact measurements, you have come to the wrong place.

Ingredients:

Oat Meal (Old Fashioned Oats)

Honey

Oil (I used canola oil because it has no flavor and isn’t terrible for you, you could try coconut oil or even sunflower oil)

Sesame seeds

Almonds

1. Preheat the oven to 350 or 375 (like I said I am not exact and rarely do I make a recipe the same way twice!)

2. Add about 2 cups of oat meal to the mixing bowl and drizzle honey on top until the top is pretty well covered

3. Sprinkle sesame seeds and almonds (I crushed my almonds so that I can use less and have almond in every bite)

4. Drizzle the oil and stir. I try to use as little oil as possible but still coating the oats.

5. Cover my pan with aluminum foil and spray it with non stick spray (this is not essential but it will help with clean up)

6. Spread the mixture on the baking sheet about 1/4 inch thick and pop it in the oven ( I use the toaster oven for so many reasons, but this allows a smaller batch and even cooking)

7. Stir the granola every once in a while for even cooking

8. They are done when they have turned from pale to golden in color, about 15 to 20 minutes

9. Take them out of the oven and allow them to cool before you serve or package them

I eat mine with Kefir and a drizzle of honey.

Mmmm, Blueberry Flax Muffins homemade (almost)

Ok, I cheated on this one. I started with a box mix. If blueberries weren’t so expensive this would have been a fully homemade meal. Once my blueberry bush actually produces blueberries (in about 3 years) I will be making Blueberry Flax Muffins from scratch!

To make the Blueberry Flax Muffins I began with a box mix from our local discount grocery store, Aldi. I added one egg (free range from our neighborhood chickens), 3 T ground flax seed, 1 c of water plus 3-5 T of water depending on the consistency of the mix. The flax sucks up moisture so adding extra water will only make the muffins more moist. I mixed it all together in a large mixing bowl and baked them in greased muffin tins at 375 until they smelled and appeared to be done, about 10 minutes. They are delicious! and have added health benefits from the flax seed, which is so good for you!We ate ours warm with a little bit of butter. Mmm, melt in your mouth good.
